Black aged garlic is white garlic that has been fermented for around a month under controlled heat and humidity. Unlike white garlic, black aged garlic does not have a strong odour. This is because the allicin content, the component that gives white garlic its pungent odour, is reduced and converted into various other compounds. Black aged garlic also has nearly double the amount of antioxidants compared to white garlic.
